Fresh Tomato Salsa


  • 2 plum tomatoes, diced
  • 1/4 fresh coriander, chopped
  • 1 jalapeño pepper, minced
  • 1 green onion, finely chopped
  • 1 tbsp (15 mL) lime juice or wine vinegar
  • 1 tbsp (15 mL) vegetable oil
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) pepper

A consistent customer favourite and aged twenty-eight months in oak, this bold red delights the nose with sweet cherry, cassis, smoky cigar box, raspberry, cocoa and black licorice.
