Eggplant Fries

Ingredients
•1½ pounds Italian eggplant (about 2 medium)
•1 tablespoon kosher salt

For the Breading
•1½ cups rice flour
•1 tablespoon sea salt, divided (we used a Sicilian sea salt)
•½ teaspoon garlic powder
•½ teaspoon onion powder
•1 teaspoon dry oregano
•1 teaspoon dry basil
•Vegetable or canola oil for frying

This Baco Noir has great aromatics, smooth, well balanced structure, deep crimson-purple colour, rich, full flavour, with deep currant, dark ripe berry flavor.

Berry aroma.  Soft, smooth, fruity finish.

Matched with grilled or roast rich red meats especially lamb and ham, game birds, chicken, turkey, vegetables, pizza, tomato based pastas and firm cheeses and dark chocolate
