Fall Comfort

Serve up an ideal start to slow cooker season with North 42 Degree Estate Winery 2012 Sauvignon Blanc!

The perfect pair to warm up on chilly fall nights!


Slow Cooker Spinach and Ricotta Manicotti

Hands on time: 30 minutes
Total time: 3.5 hrs
Makes: 4-6 servings

• 10 tubes manicotti pasta
• 1 bottle (720 mL) strained tomatoes
• ¼ cup tomato paste
• 3 tbsp. prepared pesto
• 2 tsp onion powder
• 3 cloves garlic pressed
• 1 tsp liquid honey
• ½ tsp salt
• ¼ tsp pepper
• Pinch hot pepper flakes
• ½ cup shredded mozzarella cheese
• 3 tbsp. chopped fresh basil

Spinach and Ricotta Filling:
• 1 pkg (300 g) frozen spinach, thawed and squeezed dry.
• 1 ¼ cups ricotta cheese
• egg, whisked
• 1 clove garlic pressed
• ¼ tsp each salt and pepper

Spinach and Ricotta Filling:
In bowl, stir together spinach, ricotta cheese, egg, garlic salt and pepper; using piping bag, pipe into manicotti tubes to fill.

In slow cooker, stir together strained tomatoes, tomato paste, pesto, onion powder, garlic, honey, salt, pepper, hot pepper flakes and 1 cup water. Place manicotti tubes in a single layer in slow cooker, pressing down to cover with sauce. Cover and cook on low for 3 hours. Sprinkle with mozzarella cheese; cover and cook until cheese is melted, about 5 minutes. Sprinkle with basil.
