Panzanella Squash Salad

Ingredients

  • 4 cups (1 L) (1/2 inch/1 cm) seeded, peeled butternut, turban acorn or kabocha squash
  • 1 tbsp (15 mL) olive oil
  • 1/4 tsp (1 mL) each ground cumin, and ground coriander
  •  Pinch each salt and pepper
  • 2 cups (500 mL) cubed (3/4 inch/ 2 cm) sourdough bread
  • 4 cups (1 L) baby spinach
  • 1 sweet yellow pepper, seeded and chopped
  • 1/2 cup (125 mL) sliced red onion

We process our Rose in the Blanc de Noirs style, where red grapes are pressed early to a natural pink colour.  We chose to dedicate high quality, band harvested Pinot Noir grapes to making world class Rose unlike any other.  You be the Judge.

Enjoy Cilled with crusty bread, light cheeses and cured meats for an extra enjoyable experience.  Quality Rose doesn’t get finer than this.
