Cooper’s Hawk Baco Foch + lamb chops + peaches = Fall Dinner bliss!

 

Lamb Lollipops with Peach Salsa

Ingredients

For the Lamb Lollipops:

  • 8 Lamb Lollipops (Local Lamb from The Butcher of Kingsville)
  • Salt to taste
  • Pepper to taste
  • Garlic Salt to taste
  • 3 to 4 tablespoons olive oil

For the Peach Salsa:

  • 2 Peaches 1 1/2 cups peaches, pitted and diced (From Lee and Marias Market)
  • 1 teaspoon sugar
  • 1/2 Vidalia onion diced
  • 1 Jalapeno pepper diced finely
  • 1 red pepper diced
  • 2 limes juice
  • Mint to taste chopped finely

Cooper’s Hawk Vineyard 2015 Baco Foch

This rich, full bodied wine has a nose of deep ripe fruit and cassis. The palate showcases Blackberrry jam and plums with balanced acidity.

This wine pairs well with Spicy Salami’s, Salty olives and cheeses.
