Sous-vide Ostrich Steak and Blueberry Sauce.

Salt & pepper the Ostrich. Sous-Vide for three hours. Pan fry to finish.

Blueberry sauce:

  • shallots
  • olive oil
  • balsamic vinegar
  • blueberry preserve
  • Salt and lots of black pepper.
