Fall into the weekend!

Kick off the weekend with a casual dinner menu of soup and wine!

We served up some tasty sweet potato and bacon soup, opened a bottle of Sprucewood Estate Winery’s 2012 Warm and Cozy with a fresh baguette.

A relaxing comfort meal on a cool fall night.

Bacon & Sweet Potato Soup

 

Ingredients

  • ·         2 tbsp olive oil
  • ·         2 onions chopped
  • ·         1 lb 5 oz/600g cooked sweet potato
  • ·         1 cup diced smoked bacon
  • ·         5 cups vegetable stock
  • ·         Pinch of grated nutmeg
  • ·         Salt and pepper

 

  1. Heat oil in large pan. Add onions and cook over low heat until stirring occasionally, for 5 minutes, until softened.
  2. Add sweet potato, bacon and nutmeg, stir well, then cover and simmer stirring occasionally, for 5-8 minutes.
  3. Pour in vegetable stock, increase the heat to medium, bring to boil.Reduce heat and simmer for 10-15 minutes.
  4. Remove from heat and let cool slightly. Transfer to blender in batches, if necessary and process to smooth.Return to cleaned out pan, season with salt and pepper to taste, reheat gently, stirring occasionally.
  5. Remove from heat and serve.
