Make Mom’s Day!

Mom, you have given me two things.

One is roots, the other wings.


Treat Mom like a Queen and serve Bolognese pasta paired with Oxley Estate Winery’s Ripper Red.

Perfect for Dad and kids to make ahead while Mom relaxes with a glass of wine!

Fred’s Bolognese


  • 3 pounds ground pork
  • 4-6 ounces prosciutto – cubed from thicker slices.
  • 1 medium yellow onion – medium dice
  • 2 medium carrots – medium dice
  • 3-4 celery stalks – medium dice
  • 6-8 cloves of garlic – very finely chopped
  • 1 Bottle Pinot Grigio
  • 2-3 cups chicken stock
  • 2 cans whole tomatoes – San Marzano preferred!
  • EV Olive Oil
  • 1 Cup heavy cream
  • Chopped parsley
  • Salt, pepper to taste
  • Dash (or to taste) cayenne – or other hot chilies
  • Parmesan Cheese (freshly grated preferred)
  • Pasta – I recommend a short pasta such as Penne or Farfalle.

2013 Oxley Estate Winery Ripper Red

The ripper works the ground, cultivates the soil and maximizes energy to the roots in the vineyard. The result is a deep, concentrated wine full of character and pizzazz.

Ripper Red is an intense blend of Regent and Merlot, opening with rich, lip-staining colour.

A bit wild on the nose; brambly notes of black cherry, ripe raspberry, cloves, pepper and an intriguing hint of sandalwood. Earthy, fruity and spicy flavours come together on the palate.

Enjoy tastes of cherry, blueberry and olive on a fuller mouth feel with a tingling finish.
