Asiago Bisque



  • 3 cups chopped onion
  • 1 cup chopped celery
  • 3 cups chopped carrots
  • 6 Tablespoons butter
  • 4 cups chopped and peeled potatoes, cut into small bite sized pieces
  • 1 cup white wine
  •  2 cups chicken stock
  • 2 cups half and half
  • 2 cups shredded Asiago cheese
  • 6 slices of cooked bacon, chopped

Charvivio is a lively blend of Vidal, Chardonnay, and Viognier. It is light, vibrant and elegant with some pip fruit and dried Provencal herbs on the nose.

The palate will sense a light medium bodied finish, with riverstone undertones and a clean menerally loaded finish.

Try pairing Charvivio with a light Bisque.
